Nissau est notre tènement historique, une magnifique parcelle de Grenache y jouxte celle de notre Carignan centenaire dans un environnement de forêts, de garrigues et de parcelles voisines également conduites en agriculture biologique. Élevé en demi-muids de 500 litres, ce 2020 est majoritairement Grenache. La robe semble annoncer le toucher de velours que procurent la trame tannique particulière à ce cépage. Cela permet d’en apprécier dès à présent le fruité agrémenté d’une discrète touche vanillée.

Wine making

Organic viticulture. Traditional hand picking into small crates. Temperature-controlled fermentation in stainless steel vats. Ageing in demi-muid (large wooden vat) used for two previous vintages. Sols schisteux.

Appareance

Garnet red colour, dense, crimson highlights.

Nose

Elegant, fruity, slight blackcurrant aromas, generous burlat cherries aromas, slight vanilla aromas, slight chocolate aromas, subtle smoky aromas, slight new oak aromas.

Palate

Rich, generous burlat cherries hints, slight vanilla hints, slight oak hints, fine tannin, round, slightly mineral, structured body, good intensity, long length.
